Pesto Chicken
4 servings
Combine marinade ingredients in a shallow dish or large ziplock bag:
1/2 cup low-fat pesto
1/4 cup lemon juice
zest from lemon, minced
1/4 cup mustard
Place 4 four-ounce boneless, skinless chicken breasts in marinade, turning to coat. Refrigerate 1 to 4 hours.
Remove chicken from marinade. Pour marinade into small pan and bring to boil to kill any bacteria.
Place chicken on oiled grill over medium heat. Grill, covered 8 minutes on each side, turning two to three times and basting with marinade each time.

Hot Lime Chicken
4 servings
Place the following ingredients in a large ziplock bag or shallow pan:
¼ cup lime juice
2 tablespoons extra virgin olive oil
2 large pinches cayenne pepper
4 cloves garlic, minced
Place 4 four-ounce boneless, skinless chicken breasts in marinade, turning to coat. Refrigerate 6 to 8 hours, turning occasionally.
Preheat grill.
Remove chicken from marinade, reserving marinade. Pour marinade into small pan and bring to a boil to kill any bacteria.
Place chicken on grill over medium heat. Grill covered for 10 minutes on each side or until chicken juices run clear. Baste chicken with marinade two or three times while cooking.

Substitute vegetables for half the chicken. Do not marinate the vegetables, just brush them with the marinade as they’re grilling. Good vegetable choices could be eggplant, zucchini or mushrooms, but any vegetable that your family likes works as long as it’s not a starchy vegetable such as potatoes, corn or carrots.
